The terroir of the IGP Haute Vallée de l'Aude allows for a slow ripening of the Chardonnay wine, imparting it with freshness and finesse. After pressing, the must is placed into 220-litre barrels to complete its fermentation. Daily stirring for the first two months nourishes the wine, helping to extract more aroma & complexity. The wine is then aged for 4 months, contributing to its unique character. AOP Limoux at its finest.

Our "Protect Planet" charter encourages the return of bees to our vineyards, contributing to the AOP Limoux region's rich biodiversity. This restored ecosystem constitutes a real "Butinière" that gives the wine an authentic taste. All the grapes from our IGP Haute Vallée de l'Aude are harvested by hand. The must is then put into French oak barrels to complete its fermentation. Daily stirring will "nourish" the wine, which will then be aged in barrels for 8 to 9 months.

Chenin, Chardonnay & Pinot Noir, all hailing from the AOP Limoux, are fermented using the traditional method.
