
Merlot, Cabernet, Syrah & Malbec.
All the grapes are harvested by hand, sorted on carpets & destemmed. Each grape variety is vinified separately at a controlled temperature, cold pre-fermentation maceration for Syrah & Malbec & 30-day maceration for Cabernet and Merlot. The wines are then blended and then aged in French oak barrels for 9 to 10 months.

Pinot Noir
A rare high-altitude Pinot Noir from Languedoc, this wine balances elegance & depth with its bright red cherry, raspberry, & floral aromas. Aged in French oak barrels, it gains silky tannins & delicate spice, while cool-climate freshness.

Merlot, Syrah & Cabernet Sauvignon.
Harvested by hand & sorted on a conveyor belt. Each grape variety is vinified separately at a controlled temperature. A cold pre-fermentation maceration is carried out for the Syrah & a long maceration of 30 days for the Merlot & Cabernet Sauvignon. The wines are then blended, then aged in French oak barrels for 9 to 10 month.

Merlot, Cabernet Franc & Cabernet Sauvignon.
Le jardin de Malepère is vinified in a traditional way with fermentation at controlled temperatures, daily pumping of the juice over the crust, then emptying of the tanks. To finish the vinification process, the wines undergo their malolactic fermentation & are then matured in tanks.

Pinot Noir
Handpicked with low yields (30 hl/ha), the Pinot Noir is sorted, grape by grape on a conveyor belt. It is then vinified in a traditional way with a cold pre-fermentation maceration to preserve the fruit’s aromatic potential.
A maturation period of 10 months in 225 litre barrels completes the wine's structure & fully develops its potential. The wine is then matured for a further year in the bottle.

Organic Pinot Noir
"Les Parcelles" is an overview of our high-altitude terroirs & their grape varieties.
In organic farming, our plots are located on clay-limestone soils on the slopes of the Haute-Vallée de l'Aude.
This Pinot Noir is obtained by vinification as natural as possible to express the typicity of the terroir. It will then benefit from a light period in barrels for 4 months.
